Mythbuster: Microwaving food does not destroy nutrients

veggiesMany people think that if you microwave your food that you’ll all the nutrients, but really the opposite is true. Foods cooked in the microwave tend to keep more of the vitamins and minerals as the food is cooked faster and with less water.

Then there’s that other myth that microwaving food leaves behind dangerous by-products in your food. We’re not sure just what “by-products” these are supposed to be, but the US Food and Drug Administration says that microwaving cooking is safe. Microwaving causes the water molecules in the food to vibrate which produces the heat to cook the food. So the energy caused by microwaving/vibrating the molecules creates the heat. It’s not radioactive substances that do it.
